Tri Delta House Sneak-Peek

It's done and it's beautiful! Last night I had the chance to attend the sneak-peek of the new Tri Delta house at UT! Alumni doners were able to see the house yesterday and the girls will move in today! I can't believe the house is finally complete! Such an exciting moment for the Delta Sigma chapter!

Happy Fall Y'all!

I can't believe it is "officially" fall today! Where has the summer gone?! This is definitely my favorite time of year for so many reasons, here are just a few:

Pumpkin Bread: all-time favorite snack (it's a problem, now it can be your problem too- see below)
-2 cups white sugar
-1 cup brown sugar
-4 eggs, lightly beaten
-1 (16 ounce) can solid pack pumpkin
-3 1/2 cups all-purpose flour
-1 teaspoon baking soda
-1 teaspoon salt
-2 teaspoons ground cinnamon
-2 teaspoons ground nutmeg
-1/2 teaspoon baking powder
-1/2 teaspoon ground cloves
-1 teaspoon ground allspice
-1/2 cup water

1.Preheat oven to 350 degrees F (175 degrees C). Grease two 9-inch loaf pans.

2.Mix white sugar, brown sugar, and eggs in a large bowl; stir in pumpkin and mix well. Combine flour, baking soda, salt, cinnamon, nutmeg, baking powder, cloves, and allspice in a bowl; add alternately with water to pumpkin mixture. Pour into prepared loaf pans.

3.Bake in preheated oven until golden and a toothpick inserted into the center comes out clean, 60 to 65 minutes. Cool in pans for 10 minutes before removing to cool completely on a wire rack.

Gameday & Gators

Last Saturday the Vols played the Gators and Gameday came to Knoxville. There was so much buzz and excitement on campus! We had a great time tailgating on FIJI Island with friends! Go Vols!
Katherine and Joe came with Caroline who is just learning how to walk. Katherine brought some delicious tailgate treats!

We had great weather this week for the game! Loving the Power T today!
Sadly, the Vols did not pull off a win today but that did not dampen all the fun we had pre-game! Even when we lose, I am still glad to be a Tennessee Vol!

Alan's 29th Birthday!

Alan's 29th birthday was Wednesday. Last year in his 20s! We celebrated that night with a cookie cake at small group!
 ...and when we got home his mom had an apple cake waiting for him too!
Sunday afternoon we went to my parents' house to celebrate 3 birthdays! Alan and Rachel share a birthday on the 12th and Elizabeth's birthday is on the 15th so it's a great opportunity for us to knock them all out and enjoy time together. So thankful for these 3 very special people!

1st Gameday Weekend

Alan and I had a great weekend! Friday night we went to see the Bourne Legacy. We own all the others and wanted to see this new one! It was pretty good! We missed seeing Matt Damon but Jeremy Renner did not disappoint!
Saturday was GAMEDAY! We were so excited about UT's home opener! We had big plans to tailgate but due to the yucky rain, not as many people came out as we had originally planned for. We did see Kristen and Jesse who were definitely troopers to come and hang out. The Vols had a big win against GA State and we're hoping that's just a preview of what's to come this season. Go Vols!

Labor Day Road-Trip Weekend

For the long Labor Day weekend we decided to go to St. Louis via Memphis in order to pick up Nonnie so she could come along too! We arrived in Memphis late Thursday night. The next day we were able to sleep in (P.S. I love being on central time!) take a long walk in the afternoon, and watch the first UT football game of the season that night. Go Vols!
On Saturday we headed to St. Louis. We stopped on the way for lunch at...
 Lambert's was a great stop. It reminds us a lot of Cracker Barrel (and may be even better in some ways!)
 We all ate way to much, I felt like I might pop if you poked me with a pin, yikes!
We arrived in St. Louis around 5pm and checking into our hotel. The room had a balcony with a fantastic view! We had some fun taking pictures of the Arch.
So glad we're here! That night, Alan and I went over to our sweet friends, Laura & Mike's house where we also saw Lacy, Ben, and their precious baby, Kate. Laura had prepared a delicious meal and it was so wonderful catching up on life. Oh, how I have missed them!
Sunday morning, we took the whole family to Kirk of the Hills which is the church we went to when we lived in St. Louis. Here we are with Mike and Laura!
That afternoon we went to see Disney's 'The Lion King' at the fabulous Fox theater. It was amazing! The songs gave me goose bumps and brought back so many memories. It was great!
That night we went to dinner at Pi, one of our favorite pizzerias in Kirkwood and then of course a trip to St. Louis isn't complete without a visit to Ted Drewes so we went there afterwards, it was delish!
 Monday began bright and early with a 5K run that Alan signed up for in...
We even ran into one our our good friends, Lauren, who we had missed seeing at church the day before! I was so glad we got a chance to see her! Small world!
Alan ran one of his best 5K times ever! So proud of my hubby!
Later that afternoon we headed to Busch Stadium for a Cardinals game!
Love this place!
The Cardinals won which was fun and we had a wonderful time! Such a great way to end a fabulous weekend with the family! We are blessed.
